The grapes are organically farmed by Thibault himself and are hand-harvested before undergoing traditional whole-bunch carbonic maceration. This is followed by spontaneous fermentation and 8 months of aging on fine lees in old barriques. With no fining, no filtration, and only a minimal addition of sulfur at bottling, this wine showcases the pure expression of the terroir. It’s floral, fresh, and fascinating, with a well-built palate and a vivid, succulent finish.
Fun Fact: Fleurie is one of the ten crus of Beaujolais, known for producing some of the most elegant and aromatic wines in the region.
